The Arran Distillery is the last still operating distillery on the island, which once had more than 50. Founded in 1995 , the first cask of Arran Single Malt was opened on July 25, 1998, by Ewan McGregor, a Scottish film star. The distillery sells many single malts , although some of its whiskies are used to make blends. Arran is renowned for its special fining processes and the use of exclusive barley varieties. Distillation takes place in tall, chiseled copper stills, and the whisky matures in carefully selected oak casks that have previously held sherry, bourbon, and other fine liquors. Approximately 2% of the spirit escapes each year through the porous wood, providing the angels with their heavenly portion. Arran whiskies are characterized by malty, herbal, and fruity notes.
