Michel Couvreur The Unique is an original blended grain whisky , distilled in column stills (Coffey stills) and aged for 4 years in old oak barrels. The distillate, carefully selected in Scotland, is then transported to the Bouze-lès-Beaune cellars in Burgundy, where it undergoes delicate maturation in natural galleries. Reduced to 44% with pure water from the Pentland Hills, it retains freshness and smoothness. About the distillery

The Michel Couvreur house embodies a unique and artisanal vision of whisky, halfway between Scottish tradition and the art of French maturation. Founded by Michel Couvreur, a Belgian wine merchant with a passion for wine and living in Burgundy, it established itself in the 1980s as a leading reference in whiskies aged in sherry casks. Unlike traditional distilleries, Michel Couvreur does not distil, but selects still colorless Scottish eaux-de-vie, called "new make spirits," which he imports to France to age in his natural cellars located in Bouze-lès-Beaune, in the heart of the Burgundy rock. These underground galleries offer ideal maturation conditions: total darkness, stable humidity, and constant temperature. In this mineral silence, the whisky evolves slowly, in contact with exceptional sherry casks—mainly Pedro Ximenez , Amontillado , or Oloroso —some of which are centuries old. The result? Whiskies with a rich texture, deep, elegant, always balanced and powerfully aromatic. Each bottling is the result of expert craftsmanship: the casks are monitored one by one, the bottling is done by hand, without chill filtration, with artisanal corking, waxing and labeling.
