About the distillery

For over 40 years, Michel Couvreur has been offering a unique approach to whisky: aging Scottish distillates in Burgundy cellars, in exceptional sherry casks. In Bouze-lès-Beaune, in a natural cellar carved into the rock, the maturation conditions are optimal: constant humidity, total darkness, and absolute tranquility. This method allows for a slow, deep, and stable evolution of the whisky, revealing rich and unique aromatic profiles. Michel Couvreur believed that wood and aging represent the essence of a whisky's character. Thus, each cask is individually monitored, and each bottle is corked, waxed, and labeled by hand. No additives, no chill filtration: here, only the raw material and its maturation count. This results in deep whiskies, often fruity, sometimes peaty, always balanced and full of personality. Since Michel Couvreur's passing in 2013, his family and cellar master have continued this rare and demanding work.
