Tasting notes
Nose: Empyreumatic, dominated by aromas of roasted coffee and toasted cocoa , punctuated by stewed fruits (plum, prune) and spicy and peppery touches (green pepper, gray pepper).
Palate: Rich and voluptuous, with a structure slightly sweetened by the stewed fruit, supported by spicy (cinnamon, nutmeg) and peppery notes, underlined by a pleasant bitterness of roasted cocoa .
Finish: Long and sustained, with empyreumatic accents (coffee, melted cocoa) and a final hint of green pepper and candied citrus fruits.
Pairings and tasting moments

Product History
Neisson Profil 107 takes its name from the “107” toast applied in the second stage of maturation, designed to develop intense and empyreumatic aromas. The white rum, selected for its high aromatic concentration, first matured for 14 months in 190 L ex-bourbon American oak barrels. It was then transferred to 10 225 L American oak barrels, all subjected to a specific “107” toast to exhale notes of roasted coffee, cocoa and spices. This limited edition cuvée embodies the boldness and expertise of the Neisson house, resulting in a powerful and elegant profile.

About the distillery
Founded in 1932 by the Pamphile brothers, the Neisson distillery remains one of the last independent bastions of Martinique agricultural rum. Adrien Pamphile initiated local production, while his brother Jean Neisson, a chemist by training, improved the Savalle column and created the "square-shouldered" bottle in 1952. After several generations, Grégory Vernant perpetuates the family legacy, focusing on non-hybrid cane varieties (Rubanée, Cristalline, Malavoi) cultivated on 40 hectares. Neisson produces only 400,000 liters per year, adopting a quasi-artisanal approach: natural fermentation, 73% distillation on its Savalle column, and selective aging in wood (ex-bourbon, American oak, ex-cognac, sherry, mizunara). The company was a pioneer in Martinique for its organic commitment and its work with indigenous yeasts. Under the leadership of Claudine Neisson, then Grégory Vernant, the house modernized its facilities while maintaining a philosophy of quality, authenticity, and respect for the terroir. Each vintage, including Profil 107, reflects this quest for excellence and this family passion.
