Bimber is a young and innovative distillery located in London, founded by whisky enthusiasts with a mission to produce exceptional single malt whisky. This distillery is distinguished by its commitment to using traditional methods rarely practiced in the industry today. Local barley, traditional malting, as well as spontaneous fermentation in wooden vats custom-made by founder Dairusz Plazewski, are part of Bimber 's DNA. What makes Bimber even more unique is the use of stills lit manually over wood fires, an age-old practice that gives the whisky a singular aromatic richness. The meticulous attention paid to the selection of oak barrels and the craftsmanship are the keys to their success. Each whisky is passionately blended and bottled directly on site, at the distillery's premises in London.
