Clairin Vieux Sajous is a 5-year-old Clairin-style rum produced at the Chelo distillery in Haiti. This edition is a blend of barrels that previously contained Bielle, Caroni, Hampden, Mount Gay, and Benriach rums, and finally, bourbon. It is made by Michel Sajous from the "Cristalline" sugarcane variety at his Chelo distillery in Saint-Michel de l'Attalaye. It delivers a rare intensity of empyreumatic aromas and flavors. With great purity of expression, its aromatic and flavorful palette is irrigated by cane juice whose invigorating freshness reflects the deep minerality of one of Haiti's finest terroirs. This version was aged in Haiti in the cellars of the Port-au-Prince Distillery for 5 years.

They are made from natural sugarcane (harvested by hand), without the use of hybrid varieties, with spontaneous fermentation without yeast. They are distilled in stills heated over an open flame and bottled at natural strength, without filtration.
