The Mes Favorites cuvée, signed by Jean-Paul Hébrart, brings together plots to which he is particularly attached, all located in Mareuil-sur-Aÿ, where Maison Hébrart is located. These plots bear evocative names such as Faubourg d'Enfer, Pruches, Cotes, Haut de Varille, Croix Blanche-Maladrie and Buisson Saint Loup, and are planted with old vines around fifty years old. This extra brut champagne combines 80% Pinot Noir and 20% Chardonnay, vinified and aged in vats. Malolactic fermentation has been carried out, giving this cuvée a silky texture. With a light dosage of 5.5 g/L, this champagne is classified as Extra Brut. This champagne is both indulgent and generous, presenting a beautiful golden color. It is perfect to accompany various dishes at the table. Serving temperature: 10°C.

TASTING NOTE
Nose : On the nose, we discover intense notes of fruit (green apple, pear, mirabelle plum, peach) and flowers.
Palate : The palate reveals a beautiful minerality accompanied by notes of citrus, butter, and brioche. The finish is long and persistent.

THE BRAND
The history of Maison Marc Hébrart is relatively recent. Marc Hébrart began producing champagne from his own grapes in 1964, retiring in 1997. Since then, his son Jean-Paul has taken the reins of the estate. Members of the Club Trésors de Champagne since 1985, their "Spécial Club" represents the excellence of the house. Marc Hébrart is characterized by a harmony between subtle minerality and aromas of fresh, juicy fruit. Interestingly, Jean-Paul Hébrart also sealed a prestigious union by marrying Isabelle Diebolt, thus forming another memorable marriage in the world of champagne!
