MARS Tsunuki Japanese Spring (or Japanese Spring) is a lightly peated Japanese whisky made at the Tsunuki distillery in southern Japan. This whisky is aged in a combination of 50% first-fill and second-fill ex-bourbon casks. Sherry and port casks provide depth and complexity. It is notable that cherry wood cask heads were used to give it its unique profile. Tsunuki uses whiskies peated at 20 ppm in general, in the style that Tsunuki enthusiasts will recognize.
Spring in Japan is synonymous with radiant weather and cherry blossoms. It's often the favorite time of year for the Japanese, and also for the Mars whisky house, renowned for the production of its single malts. The blooms begin in the south at the end of March and spread northward across the archipelago. Mars' three aging sites are gradually adorned with pink blossoms: first on the island of Yakushima, where a tropical and maritime whisky is aged, then continues in Tsunuki, whose distillery produces a deep and energetic whisky, and ends further north at the Komagatake distillery, offering a fruity and elegant whisky, where this panorama of pink and white accompanies the melting snow. The climate becomes milder in cities and the countryside, giving locals the opportunity to gather in parks to contemplate this captivating spectacle. The concept of hanami (literally, "flower watching") refers to this traditional Japanese custom of appreciating the beauty of flowers.
TASTING NOTE
Nose : Fruity notes with rich aromas of berries and red fruits baked in a crumble style. The nose becomes more stewed (apples) and spicy (white pepper, cinnamon), all enveloped by a fine smoke.
Palate : The fruit is still very present and delicious, but is now accompanied by a new acidity with an exotic character (passion fruit) and a delicate bitterness with dark chocolate. The finish is pronounced on a noble woodiness to deliver a beautiful structure.
Finish : The smooth finish adds depth to a mouthful of energy. A perfectly mastered balance.
THE BRAND
The Mars Shinshu Distillery is located at an altitude of 800 meters on the island of Honshu in Japan. The Mars Distillery was founded by the renowned Kiichiro Iwai. Its water comes from the Kiso Mountains and passes through thick layers of granite, which purify it before its arrival. The whisky is distilled only during harsh winters and is marketed under the name Komagatake. In 2015, Mars decided to develop a second distillation site, at its historic base in Kagoshima, under the name Tsunuki. The unique climate, around 30°C in summer and -2°C in winter, should have a very different effect on Shinshu whisky.
