In 1670, the Benedictine monk Dom Pérignon of Hautvillers Abbey ushered in a new era in the art of winemaking. He went further by reinforcing the bottle with thicker glass to prevent explosions due to the pressure of the effervescence, a choice that is still echoed today in modern production methods. Dom Pérignon takes advantage of the chalk pits located near its abbey to create ideal conditions for storing champagne, maintaining a constant temperature and humidity.
