Champagne Lallier: a grand cru from Ay combining tradition and modernity under Campari
Founded in 1906 in Aÿ, Champagne Lallier is a grand cru house that has successfully preserved and reinvented its heritage. Relaunched by Francis Tribaut and then integrated into the Campari group in 2020, it now benefits from the technical leadership of Dominique Demarville, Managing Director and Cellar Master, who combines rigor, elegance, and a contemporary vision to take the house to new heights. The Lallier vineyard, spread across a strategic axis between the Marne and the Montagne de Reims, comprises 15 hectares, mostly classified as Grand Cru. The grapes are meticulously selected—Chardonnay, Pinot Noir, and sometimes Meunier—to faithfully reflect the terroir. The house has centralized its winemaking in Oger while retaining its historic cellars in Aÿ, and displays an environmental commitment recognized by the HVE-3 certification. The Lallier style is characterized by a subtle balance between precision, freshness, and the pure expression of the grape varieties. Cuvées such as the Grand Cru Ouvrage, the R15, and the Blanc de Noirs, all non-vintage, demonstrate masterful creativity: they push the boundaries while remaining faithful to a refined Champagne aesthetic, driven by tension and length on the palate. In parallel with its quest for excellence, Lallier collaborates with haute cuisine to explore innovative food and wine pairings.
